This table-strength saison is a nod to the saisons brewed in Wallonia—the French-speaking part of Belgium—which were often lower in alcohol content to prevent farm and field workers from getting hammered while slaking their thirst during a hard day’s work.

The use of French Saison Yeast creates true to style pear, apple, and cracked pepper notes that take center stage in this beer. A generous addition of blackberries post-fermentation gives this beer its pink/purple hue and adds a hint of sweetness to offset this typically dry style. This beer was dry hopped with Lemondrop hops, giving the beer a subtle note of lemon hard candy that is meant to compliment the blackberry.

This beer was brewed in collaboration with Shanti Volpe, founder and owner of Shanti Elixers, an award-winning local Junery located in Weaverville. Both Shanti’s Jun and our saison feature blackberry and hops, and debuted at Pink Boots Society’s Biere de Femme Festival in Charlotte.
